Who says you can’t love your veggies for breakfast?
I made this for breakfast this morning and totally fell head over heels (Erinn did too I think).
I’m a sweet potato fan (!!), especially this time of year when it is so chilly out, and dreamt about creating a perfect sweet potato pie smoothie that would be healthy, delicious and totally nutritious. I think it could be those spices we yearn for – especially in the fall and winter – that actually help to comfort us and keep us warm by boosting our metabolism.
The beta-carotene that is abundant in sweet potatoes is great for your eyes not to mention the high antioxidant levels from vitamins C and E are also very kind to the eyes and may prevent degenerative damage (I need to share this with my mom!). They are a good source of vitamin D too and many other healthy minerals like copper, iron, manganese, phosphorus and more. If you think about it, it is so important to always choose organic as this nutrient rich tuber is created by a plant that has stored it’s nutrients in their fat roots (which is really a sweet potato) submerged in the soil.
Sweet potato is very similar to pumpkin, the inherent spices that compliment them so well (allspice, cinnamon and nutmeg), are healing and very warming and I think that is why I crave these types of spices in -10C weather.

This is great as a weekend morning smoothie – even better when paired with a pumpkin scone from Kelly’s Bake Shoppe.

I would never have thought that sweet potato would taste good in a smoothie. Thank you for sharing this recipe. I’m addicted to it now.
